Abstract: The goal of this research was to investigate indirect exposure through immersing three verities of dates fruits (Sefri, Khudari and Seri) in boiling solution. The heating was introduced by conventional Heating and by using electrical conductive method through salt solution to kill some stages of Oryzaephilus surinamensis: Silvanidae insects. The results indicate that the destruction rate order of the adult stage and larva stage of the insect was zero order in both direct and indirect heating regardless of the heating mechanism wither it was a conventional or an electrical. The adult stage was more resistance than the larva stage and both stages were sensitive to temperature changes. In addition, the destruction of the adults insures the destruction of all other stages of the insect. There was no significant change between the destruction rate when using conventional heating or electrical heating in case of Sefri and Khudari.Applied mathematical models were developed to describe the electrical conductivity of immersed system of dates in sodium chloride solution and for the heat penetration into the date fruits as well.
