| Abstract: | The response of six local old cultivars of Saudi Arabian wheat in relation to quality of grains was studied, under water stress conditions. Three watering intervals were used; 10, 16and 22 days. Mois-ture, fat, protein and amino acid profile were obtained. Results showed that the cultivars have high con-tent of protein and some have high content of glutamic acid. This has an important implication in human nutrition. |
